Healthy Chocolate Banana Muffin Cake with Tofu



Zero butter, cream or eggs!!!
Low calorie, low fat, low cholesterol but high in protein~~~ =D

Basic Batter Recipe:

Cake Flour - 100g
Baking Powder - 1 tsp
Pinch of salt
Tofu - 120g
Vegetable Oil - 2 tbsp
Maple Syrup/Honey - 3 tbsp

(Optional Variations)

Cocoa Powder or Matcha Powder - 1 tbsp
Mashed Banana or Pumpkin - 100g
Chocolate - 50g

  1. Blend the soft tofu until creamy, add vegetable oil and maple syrup.
  2. In another bowl, combine cake flour, baking powder and salt.
  3. Combine the wet and dry mixture together.
  4. Mash up some bananas until mushy and add to the batter.
  5. Chop up some chocolate and add to the batter as well.
  6. Scoop into baking cups until 2/3 full.
  7. Top with some sliced bananas and more chocolate chips. =P Okay not so healthy anymore unless it's super dark chocolate...
  8. Bake @ 180C for 20-25 mins
