Quick Easy and Delicious~
INGREDIENTS: (2 Servings)
Dried scallops 20g
Dried black fungus 5g
Dried burdock root 5g
Dried shiitake mushroom 5
Chicken paitan 500ml (I used chicken broth instead because I wanted a clear soup... somewhat...)
White soy sauce to taste
Carrot
Green beans
Sour Plum Sauce:
Chicken wings 2
Dried plums 10
White portion of leek
Perilla leaves (I used lemon balm because I couldn't find any)
Chicken paitan
Starch 1 tbsp dissolved in 1 tbsp water
- The night before, soak the dried scallops and mushrooms.
- Soak the burdock root, dried plums and black fungus 1 hour beforehand.
- Simmer the rehydrated plums until soft.
- Let it cool first, remove the pits and chop it up really finely.
- In a small pot, combine together plums, chicken meat, leek and perilla leaves.
- Add in chicken paitan made from the wings.
- Simmer and add the dissolved starch to thicken it into a sauce.
- In a pot of chicken soup, add the mushroom, burdock root, carrot, green beans and black fungus.
- Bring to a boil and add scallops.
- Cover with a lid and cook for 15-20 minutes.
- Add white soy sauce according to taste.
- Cook the ramen separately and pour the soup on top. Serve with the sour plum sauce~
