Onigiri Chazuke with Salmon - EP 4

Shokugeki no Soma Recipe





Soma's late night snack!! Original recipe uses mackerel and kelp tea, but I made salmon onigiri chazuke with dashi broth. I personally think broth tastes better than kelp tea... but it's up to you!! Enjoy~~~ =)

PS. Same kombu used to make Megumi's cheese and kombu onigir!!!


INGREDIENTS:

KOMBU:


50 g kombu sheets 
1 tbsp rice vinegar
2 tbsp soy sauce
3 tbsp sake
1 tbsp mirin
1 tbsp sugar
ginger

ONIGIRI:

mackerel or salmon chunks
olive oil
rice
salt & pepper

DASHI SOUP:

1 cup dashi
1 tsp mirin
1 tsp soy sauce


  1. Soak kombu until soft and cut into thin slices. Careful as it is slippery.
  2. Place the kombu slices back in its soaking water and add vinegar. Leave for another hour.
  3. In a large pot, pour in the kombu and soaking water.
  4. Add ginger slices, sugar, sake, mirin, soy sauce.
  5. Bring to a boil then simmer until all of the liquid is gone. It takes a looong while...
  6. Pan fry the fish in olive oil. Sprinkle on some salt & pepper.
  7. Combine rice with the kombu and make an onigiri with the fish in the center. 
  8. Pour in the soup and dig in!!
