Shokugeki no Soma Recipe
Original recipe uses canned mackerel in water, I used tuna instead.
All cans have different amount of liquid in them, adjust the saltiness of the sauce according to your taste, don't be like me and make the sauce too salty~ =P
1 can of mackerel or tuna in water
1/2 medium onion
1 large egg
1 - 1 1/2 cup of breadcrumbs
salt & pepper to taste
vegetable oil
1 - 2 tbsp ponzu (citrus flavored soy sauce)
1 tsp dissolved starch
- Chop the fish finely and be sure to save the liquid in the can for the sauce.
- Chop the onion finely as well and combine with the fish.
- Beat an egg and add to the mixture.
- Season with salt and pepper.
- Add in the breadcrumbs in portions as you knead, don't let the patty get too dry and crumble apart.
- Form patties and pan fry in some oil.
- When one side turns a golden brown color, flip it over and cover with a lid and cook over low heat for another 2-3 minutes.
- For the sauce, take the reserved water from the can and combine with a bit of ponzu, adjust the saltiness accordingly, add water if necessary.
- If using light soy sauce, feel free to add some lemon juice.
- Thicken the sauce with some dissolved starch and it's complete!!
Tips:
- Use sesame oil for more flavor!!
