Sweet Pumpkin Soup
Steamed Pumpkin Cakes
What to do with all the pumpkin in October? Dessert of course!! Plus it's healthy and relatively low in calories~ =9
Pumpkin Soup:
1.5 lbs pumpkin
3/4 cup of short grain glutinous rice
4 cups water
3 tbsp white sugar
3 tbsp brown sugar
pinch of salt
chopped pine nuts or walnuts for topping
- Presoak the glutinous rice for at least one hour.
- Steam the pumpkin until soft.
- Scoop out the pumpkin with a spoon and transfer to a blender.
- Add rice and water to the blender as well and blend until smooth.
- Over medium heat, continue stirring for 5 minutes and it will start to thicken.
- Add the white and brown sugar and keep cooking for 5 minutes more.
- Sprinkle some nuts over top and it's ready to serve~~~
Steamed Cakes:
125 g pumpkin
200 g cake flour
1 1/2 tsp baking powder
100 g milk/cream
30 g vegetable oil
1/3 cup white sugar
1 large egg
pinch of salt
- Sift together the cake flour and baking powder.
- Beat the egg until fluffy and mix in sugar, salt, milk, oil and mashed pumpkin.
- Combine the wet and dry mixture together and keep mixing until smooth.
- Scoop into molds and steam for 15 minutes.
