Healthy Pumpkin Desserts

Sweet Pumpkin Soup


Steamed Pumpkin Cakes



What to do with all the pumpkin in October? Dessert of course!! Plus it's healthy and relatively low in calories~ =9


INGREDIENTS:

Pumpkin Soup:


1.5 lbs pumpkin

3/4 cup of short grain glutinous rice
4 cups water
3 tbsp white sugar
3 tbsp brown sugar
pinch of salt
chopped pine nuts or walnuts for topping

  1. Presoak the glutinous rice for at least one hour.
  2. Steam the pumpkin until soft.
  3. Scoop out the pumpkin with a spoon and transfer to a blender.
  4. Add rice and water to the blender as well and blend until smooth.
  5. Over medium heat, continue stirring for 5 minutes and it will start to thicken.
  6. Add the white and brown sugar and keep cooking for 5 minutes more.
  7. Sprinkle some nuts over top and it's ready to serve~~~

Steamed Cakes:

125 g pumpkin

200 g cake flour
1 1/2 tsp baking powder
100 g milk/cream
30 g vegetable oil
1/3 cup white sugar
1 large egg
pinch of salt

  1. Sift together the cake flour and baking powder.
  2. Beat the egg until fluffy and mix in sugar, salt, milk, oil and mashed pumpkin.
  3. Combine the wet and dry mixture together and keep mixing until smooth.
  4. Scoop into molds and steam for 15 minutes.
